I'm transitioning from Windows to Linux and am trying to find a suitable alternative to Outlook for my email needs. Any recommendations or personal experiences would be greatly appreciated! Thanks!

What specific features do you need? Do you just want email, or are you looking for something with a calendar and address book as well?
We use KMail, and it definitely has a lot of features—maybe too many for some! It can be pretty overwhelming with settings, but if you're after lots of functionality, it could be worth trying. Thunderbird might be a good middle ground since I haven't used it extensively, but I've heard good things.
You can't go wrong with Thunderbird! It's a solid email client that's available for Windows and macOS too, so you can test it out beforehand.
I've actually switched from Outlook Express to using a self-hosted cloud email system. I started with RoundCube and now use Rainloop. It does require your own domain, which you can get for free, and setting it up can be tricky. But once it's running, it's been super reliable for years! You can even get a free subdomain for hosting.
The request for an Outlook replacement is a bit broad. What specific functions are you looking for in an email client?
