I've spent quite a bit on my build and just realized that my old 650W power supply won't cut it anymore. I'm in need of a new one, ideally around 850W. Can anyone suggest some good, affordable options? Just for reference, I'm using a 9070 XT and a 9600X processor.

Check out the Montech Century II 850W power supply. It's 80 Gold certified, fully modular, and generally gets good reviews for its price. Just make sure it ships to your area, I noticed some places might have restrictions.
Definitely go for a Gold rated PSU instead of Bronze. It might cost a little more upfront, but you'll save in the long run with better efficiency and reliability!
