However, I'm struggling to get shortlisted for jobs, and I think my projects are too basic. So far, I've worked on a simple e-commerce site, a portfolio site, an AI-based fraud detection project, and a weather application. I'm looking for ideas for full-stack development projects that could help enhance my resume. Any suggestions?

It sounds like you need to narrow down your focus to just a couple of roles. Look at the tech skills that are frequently listed in job postings, learn those, and then build projects around that tech. Just experimenting with something like GPT can give you some project ideas. A single fraud detection project might not be impressive enough for data science roles, and basic websites won’t help for full-stack positions unless you dig deeper into a specific tech stack.
