I'm considering whether to get a 512GB or 1TB SSD just for system files, documents, and general usage. I don't have plans to store any large applications like Office 365 on this SSD, as it's mainly for my gaming PC.

I think a 512GB SSD will be sufficient for system files, downloads, and apps. You should be good with that size unless you plan on installing a lot of games directly on the C drive.
If you're only using one M.2 slot, consider making the 500GB M.2 your main drive and adding a 1TB SATA if that's an option for you. You can repurpose the 128GB SSD and the 1TB HDD for additional storage.
Since SSD prices have been rising, you might want to consider cloning your C drive to one of the M.2 drives if possible and making it your boot drive. Just ensure to back up any important data first, and I recommend using Macrium Reflect for the cloning process.
