I just got my hands on a 9070xt graphics card, and I'm looking for some advice on which monitor to buy. I'm primarily going to use it for gaming, so I'm aiming for something with a 2K resolution. My budget is about 600 bucks, which rules out 4K options.

Have you tried checking out different screen sizes in person? It really depends on what feels comfortable for you. I've had a bunch of monitors over the years and settled on a 27" as my sweet spot, while my brother prefers 34". You'll have some solid choices within your $600 budget, but make sure the size feels right for your gaming setup!
I'd definitely suggest going for a larger monitor! People rarely complain about size when it comes to screens. I've been using a 32" 1440p monitor for a while now and I'm even considering bumping up to a 40" 4K monitor next. Just remember, a 32" 1440p actually has better pixel density than a smaller 1080p monitor, so you won't sacrifice clarity by going bigger. I find that 27" is pretty much perfect for gaming, but I wouldn't go any larger than 32". Anything beyond that just feels too big for my liking!
