Should I choose 8GB or 16GB of VRAM for gaming and video editing?

I'm considering getting the RX9060 XT graphics card, but I'm torn between the 8GB and 16GB versions. I'm primarily using Linux and plan to use it for gaming (mostly at 1080p, though I'd like to try 4K) and some video editing. Right now, I'm using integrated graphics, which is really slow. The price difference is about $100, and my budget is around $350.

I want to make a solid choice since I won't be upgrading my GPU for at least the next three years, although there's no 12GB option available. Considering my usage and future-proofing, would 8GB be enough, or should I invest in the 16GB version? Thanks for any insights!
