I've been using my old GTX 1060 with a Ryzen 7800X3D and 32GB of RAM in my PC for about a year now, but I'm finally looking to upgrade my GPU. The 5070 and 9070 are both priced similarly in my country, with the 9070 a bit cheaper, while the 9070XT is about $100 more, which feels excessive. I'm planning to game at 1440p for the next few generations, and with my experience on the GTX 1060, I'm concerned that the 5070's VRAM might become a limitation. Would it be better to go with the 9070 since it's more future-proof? Also, I mainly game and use emulators—are AMD GPUs good for emulation? What should I know about AMD before making a purchase?

If you're primarily focused on gaming, the 9060 could potentially suit your needs better. Just keep in mind that it might not hold up as well over time at 2K. You might want to consider the 9070 to avoid any VRAM issues down the road, especially with the concerns over stock for future generations.
From what I understand, emulation is mostly reliant on your CPU rather than your GPU. However, the 9070 would be a more reliable choice due to having more VRAM. It should provide a solid performance for at least 4 to 5 years at 1440p.

How many years do you think a 9060XT would be decent for at 2K resolution? Is it future-proof enough, or should I just get the 9070?
