Should I consider Intel CPUs if I’m not overclocking my RAM?

I've heard that Intel CPUs benefit from faster RAM, but I'm a bit skeptical about overclocking. I've had terrible experiences with overclocks in the past, not related to RAM, which has made me cautious about messing with anything that could cause instability. For instance, my last GPU had a factory overclock that caused crashes in some games, and I spent ages trying to find the problem. Eventually, I discovered that I had to manually adjust the GPU settings every time I restarted my PC using a third-party app that wasn't even made by my GPU's manufacturer. Plus, I had issues with an automatic overclocking application from ASUS that caused blue screens. All of this hassle has made me wary of XMP or any form of overclocking. Given my background, should I even buy an Intel CPU if I'm not inclined to utilize XMP for RAM?
