I've got this really old SSD that I'm using for Windows and it's set up as MBR. I've upgraded my PC a lot over the years, but this SSD has stayed the same. I also have three other drives, including two 2TB M.2 drives for my pictures and games and a 500GB SSD that's empty. All my drives are currently MBR. I tried to convert my Windows drive to GPT using the command line, but I ran into issues because it has three partitions: system reserved, Windows, and system recovery. I read that to convert to GPT, there should only be two partitions, and I'm stuck on how to move the system recovery to another drive. So I'm wondering if I should just do a clean install of Windows instead, or keep trying to convert everything to GPT. A fresh start sounds appealing, but I'm worried about losing my pictures and save files. Any advice would be great!

A clean install might be your best bet here. Just connect the drive where you want to install Windows and keep other drives disconnected during setup. This will require deleting all partitions on the new drive, so make sure to back up any important data first! But since your 500GB drive is empty, you should be good there.
So if I go that route with my 500GB drive, does that mean I can keep all my files on the other drives, including my old Windows stuff like AppData? I'm really worried about losing my save games that are on my current C: drive. Is there any way to keep those or move them after the clean install?
