I'm looking to squeeze every bit of performance from my PC since I'm playing some poorly optimized games like Star Citizen and Escape from Tarkov. Honestly, if you're really looking for better performance, it might be more effective to just upgrade your CPU or GPU instead. Even if overclocking nets you a few extra FPS, poorly optimized games will still run poorly regardless.
Overclocking these days usually provides only single-digit gains in performance, not worth the hassle. Both your CPU and GPU already perform well out of the box. You could try enabling Precision Boost Overdrive (PBO) for your CPU and do an auto overclock for your GPU, which might give you a tad more performance without the risks of manual overclocking.
Most components come with a mild overclock pre-configured now, so manual overclocking isn't as necessary. You're not going to achieve the drastic improvements we used to see years ago.
I wouldn't bother with overclocking your Ryzen 9 5900X; it doesn't have much headroom left. You're not going to see significant improvements, honestly. Plus, the 5070 isn't anything to write home about in terms of overclocking potential either.
