I'm currently running a media server on Ubuntu that I typically use for a few hours each day. When I'm not using it, I've just been leaving it on continuously. Is it a good idea to put it into suspend or sleep mode instead? If so, how would I go about doing that?

Honestly, I'd suggest just leaving it on. It doesn't use much power, and there's really no harm to your hardware. If you're keen on automating sleep mode, there's a complex guide out there to help with that, but if you’re okay turning it back on manually, it’ll be much easier.
At the end of the day, it's really your call unless power consumption is a major concern for you.
If your hardware supports it, you could consider using 'Wake on LAN' to easily wake your server up when you need it without leaving it running all the time.
