We migrated about a year or two ago, and it was technically straightforward. The biggest issue was getting staff on board. Some people were resistant to change, and there’s always that one person who panics about not finding an old email. What worked for us was migrating inboxes first so everyone had their important emails available in the new system before switching DNS. We kept the old Gmail accounts active for a couple of months just in case anyone needed to dig something up.

Because managing email servers isn't something most people want to deal with.
