I'm really struggling with three different multifunction printers (MFPs) - two Xerox Versalinks and one Lexmark. They all used to scan to email without issues, but now it's hit or miss. The setup uses smtp.office365.com, and sometimes it works quickly, other times it hangs for a while before going through, or it just fails altogether with a remote connection error. My internet seems fine, and the internal network is running smoothly. Does anyone have suggestions for things I can try to resolve this?

Have you tried smtp2go? It's a reliable service for this sort of issue since Microsoft doesn't typically support traffic from MFPs well.
It looks like Microsoft is phasing out SMTP AUTH, which will be fully shut down by April. You might want to consider using SMTP relay instead to avoid these issues.
Using smtp2go is a great call! MFPs often struggle with modern email protocols, and smtp2go lets you set things up once and forget about it.
Consider changing your DNS servers to something like 8.8.8.8 and 1.1.1.1. Also, make sure your MFP has the correct gateway set, and it wouldn’t hurt to update the password for your SMTP authentication, just in case it’s expired.
If your office has a static IP, setting up an SMTP relay with a connector might be the way to go. Microsoft has detailed instructions on how to configure that.
