I've got two iPhone 14 devices that have both experienced network connection problems over the last six months. This can't be typical for Apple devices, right? Is there any way to fix them, or do I really need to replace the hardware?

I totally get your frustration, but you can’t really judge all iPhones based on just two. There are millions in use every day! Can you give more details about the network issues? Were the phones new from Apple or from another place? Are the connection issues happening with both cellular and Wi-Fi? What exactly is going wrong with them?
How exactly are they broken? If you took them to the Apple store, what did they tell you specifically? That could give us more insight into what’s going on.
I have to ask, how did they break? What were you using them for before the issues started? It’d be helpful if you could share a bit more about what happened.
