I'm currently going through a Bash course on YouTube and was wondering if anyone could recommend some good practice assignments to help me solidify my skills. I'd also appreciate resources that cover sed and awk.

Those suggestions are solid! I’d also suggest checking out a book on Unix and different shells, including awk and sed. The fourth edition is the latest, and it goes into great detail.
For sed and awk, I recommend visiting the Grymoire website. Also, the Wooledge site has a Bash FAQ that’s super useful for learning more about scripts and commands.
You should look at this tutorial site. The terminal section is really helpful for beginners in Linux, covering a lot of essential commands and practices.
