What are the best lightweight Linux distros for 2GB VMs on 8GB systems?

I'm looking for some advice on lightweight Linux distributions that can run well in a virtual machine with only 2GB of RAM on systems that have up to 8GB of RAM. I'm planning to introduce some newcomers to Linux gradually, and I'm using virtualization to keep things manageable. The machines I'm targeting typically have low-end Intel chips, like a Surface Pro 3 or MacBook Air with 4GB of RAM, and some with configurations up to 8GB. I'm using Parallels Desktop and VMware for virtualization, and I need distros that not only run smoothly but also have decent graphical user interfaces. Bonus points for any suggestions on getting VMware to work well too!

Bodhi Linux 7.0 HWE is a great choice for those specs; it runs pretty smoothly even with limited RAM.
