What CPU should I choose for gaming and engineering tasks?

I'm currently using a 36" ultra-wide monitor with a resolution of 3840x1600. My system has an i7-8700k, an RTX 3070, 64GB of RAM, and a 2TB SSD, which I built back in 2018. I mainly work on engineering projects, dabble in AI (without local training), and do a lot of astrophotography that requires both CPU and GPU power. Recently, I've been experiencing significant performance issues while playing Path of Exile, with lots of flickering that makes it hard to enjoy the game. Besides gaming, I handle typical multitasking with PowerPoint and Office 365, along with streaming. I'm considering the 9950X3D and Intel's ultra 9 285K, but I'm also looking at the 9800X3D; however, I think I need a CPU with at least 16 cores for my astrophotography work. I'm leaning towards an RTX 5070 TI due to the high price of the 5080. What CPU would you recommend for my use case, and does it really make a difference?

Thanks for the input! I've noticed that the 285K has 24 cores; do you think that would significantly benefit my workload or is the 9950X3D still better overall?

The 9950X3D offers a fantastic balance for gaming and productivity tasks. I have the 7950X3D and never face any issues with heavy applications like AutoCAD or gaming performance, so I think you'd be very happy with the 9950.
