I'm planning to upgrade my setup by swapping out my AM4 motherboard, CPU, and RAM for some AM5 components. Right now, I have four drives: two NVMe SSDs, one SATA SSD, and one SATA HDD. My Windows installation is on one of the NVMe drives, which I plan to format since it's the boot drive. I assume the other drives won't need formatting, right? I also need to sell my old motherboard, CPU, and RAM to a friend, so is there anything I should do beforehand, especially regarding the motherboard or BIOS? Lastly, I'm getting a Ryzen 7 9800X3D and I've heard some reports about stability issues on AM5 boards. Should I flash the BIOS on my new motherboard before installing the CPU, or can I do it after the build? Any guidance would be super helpful!

If you're not going with an Asrock motherboard, you should be fine without flashing the BIOS first. It's generally a good idea to update the BIOS once everything is set up, though, since AMD has rolled out multiple updates that improve stability and performance for the newer Ryzen chips.
