I'm planning to build a gaming PC that can handle 1440p gaming, with a budget of around £1300 (about $1700). I have some knowledge about PC components and building but need help picking the right parts. I prefer an AMD CPU and I'm flexible about the GPU brand. I was considering the 7800 XT but someone mentioned the 7900 XT 16GB or the RTX 5070 Ti might be better options. I'd like to go for an AM5 setup with a B850 motherboard or at least a B650, ideally ATX size. I'm into games like Cities: Skylines 2, No Man's Sky, Minecraft, Crusader Kings 3, and Hearts of Iron 4, and I also do some PCVR gaming. My current setup includes a 3060 Ti 12GB, Ryzen 5 5600X, B450M-K II motherboard, 32GB of RAM at 3200 MT/s, and a 600W power supply. While aesthetics matter to some extent, I prioritize performance and I'm open to using an AIO cooler and a fish tank case if possible without blowing the budget.

I think your best bet is to sell your existing PC as it is and use that cash to build a brand new one with the parts I mentioned! With your current budget and the value of what you're selling, you should be able to put together a powerful 1440p rig and still have some budget left over for those fancy extras like an AIO cooler or the fish tank case you mentioned.

With a $1700 budget, you might want to consider upgrading your current rig instead of starting from scratch. You could get an AM5 motherboard and a 9800X3D processor along with 32GB of DDR5 6000 CL30 RAM, and then pick either the 5070 Ti or 7900 XT. You can probably sell your old parts on eBay for a decent amount, making it easier to refresh your setup for under $1000.
