I'm building my first PC and I want to use a 5070 Ti GPU, which requires a 16-pin connection. However, my current power supply has 8+6+2 pin connections. I'm unsure how to proceed—should I replace my power supply or can I use what I have? Any advice would be really helpful!

If you're looking at powering this GPU, just stick with the adapter that comes with it for now, but keep an eye out for a more suitable power supply in the future!
You actually get a 3 x 8-pin to 12V-2x6 adapter with the 5070 Ti, so you could use that with your existing PSU. Just keep in mind that it's better to get a direct connection when possible.
I'd recommend getting a PSU that directly supports the 16-pin connection. Those adapters that come with the GPU for older PSUs can be unreliable and even melt. A new ATX 3.1 PSU with a direct 12V 2x6 cable would be much safer. A 750W or 850W unit would work well and typically costs around $100.
I’d avoid using the Nvidia adapter that comes with the GPU if you can help it. Depending on your PSU, it might be worth investing in a straight-up power supply that offers the necessary connections.
