I'm planning to build a gaming PC and trying to decide on the right wattage for a power supply with the 5070 Ti. While the 5080 would be a great GPU option, its 360W requirement seems like overkill compared to the 5070 Ti's 300W. I initially thought about getting an 850W power supply for the 5070 Ti, but I've run into a snag at Micro Center. They only have 1000W and 1200W Seasonic power supplies available, which feel excessive for my setup. I reached out to Micro Center, and they mentioned they currently don't have the 850W in stock. They did say that the 1000W would work fine, especially since it's a quality Platinum-rated unit, and while it's overkill, it could slightly improve efficiency. With all of this in mind, I'm looking for advice on what to do next: Should I go with the 1000W, or is there a better option?

It really depends on your CPU too! If you're using a 65W AMD CPU, then a 750W supply should be fine. Otherwise, 850W is solid for both GPUs. Going higher isn't necessary unless you plan on pushing for a more demanding setup.
Honestly, 850W is more than enough for a 5070 Ti and even for the 5080 if you go that route. You don't always have to stick with Seasonic—look for a good quality ATX 3.1 unit rated A tier on the SPL Tier List.

I get that, but I trust Seasonic for reliability. They tend to last longer and offer better warranties.
