I'm planning to upgrade my setup to a 13600K processor with a 9070XT graphics card, using a 360mm AIO cooler, 32GB of DDR4 RAM, and 8 x 120mm fans. I currently have a Gigabyte P750GM PSU that worked fine with my old 3060Ti. I'm curious if this 750W power supply will suffice for the 9070XT or if I should consider upgrading to an 850W or even higher wattage. Any recommendations?

You might not need to upgrade just yet. A buddy of mine has a similar setup with a 750W and it runs fine. However, if you notice any power issues, consider getting a stronger unit.
Honestly, if it were me, I'd just grab a 1000W PSU. They’re becoming increasingly power-hungry, and having extra wattage could save you headaches down the line. A solid PSU can last you a long time.
