I lost my iPhone, and unfortunately, I didn't have Find My iPhone enabled. I'm not too bothered about getting the device back, but I'm concerned about my data. My phone is password protected, but I'm worried that someone could access my personal information if they manage to unlock it. If I remove my device from iCloud, will that prevent someone from accessing my messages and photos if they get into the phone? Also, is there a chance someone could wipe my device and set it up for themselves since Find My iPhone is off?

Don’t remove the iPhone from your iCloud account! If you do that, it might give someone easier access to your data. Even though you can't mark it as lost since Find My iPhone isn’t enabled, leaving it on iCloud is the safer option.
To get into your iPhone, someone would need to know your passcode. However, if they connect it to a computer, they can erase it and set it up as their own. You might want to consider asking your carrier to blacklist it, but that only stops it from being used on their network.
