I'm dealing with a really stressful situation at work because my employer insists they sent an important email to my personal account from their company Outlook, but I only received one email on a different date. They've provided some screenshots and .eml files to support their claim, but I know I didn't get that specific email. My job could be at risk because of this. Is there any way to prove that the email they claim to have sent isn't real? What evidence should I look for to support my case? I'd appreciate any advice on how to handle this situation!

You should think about getting a lawyer involved. It might be necessary if your job is at stake.
EML files are just plain text files with email content and headers, and anyone can edit them. Screenshots can also be modified. If I can't see the email in their 'Sent' folder, I wouldn't believe it.
Sometimes emails get stuck in 'Drafts' and aren’t actually sent. That's worth checking.
And don’t forget to check your spam folder for that email. Sometimes things get misrouted, especially if it was recent.
Definitely ask for the Delivery and Read receipts. Remember, the burden of proof is on them, so they need to provide evidence for their claims.
Contact your company's IT department. They can perform a mail trace in the email system to check if the emails were ever sent and under what timestamps.
Honestly, just don’t show up for work tomorrow. If they fire you over this, then you probably don’t want to work there anyway.

That’s true! Is there any evidence I could ask for that they couldn’t easily alter?
