What’s a good upgrade from a GTX 1080 non-TI?

I've been using a GTX 1080 non-TI and it's been great for my sim racing games. However, I've noticed that I'm missing out on titles like Doom and other recent games. My current setup includes a Ryzen 5 5600G, 32GB of RAM, and a 600W power supply. I'm looking for suggestions on a graphics card upgrade that fits within a budget of around $600 to $700. I'm also open to any other upgrades I should consider. I'm planning to use either three 1440p monitors with my gaming or one 4K monitor, aiming for a minimum of 60fps. I have a feeling that the RTX 5090 with an upgraded PSU and RAM could be my best bet, but I'd appreciate your thoughts and recommendations!

With your Ryzen 5600G, be aware that the card may be limited in PCIe lanes. Going for something like the 6700 XT or even an RTX 3060 might make more sense, but keep in mind you're on PCIe 3.0 with 8 lanes on the second slot.

I checked, and the slots give me 16 lanes for one card and 8 for another.
