I'm using an Ultra High Speed HDMI cable with my Xbox Series X, and I want to know if it's good enough for achieving 4K at 165Hz on my LG G5 OLED 55-inch TV. I'm curious about what others with a 5090 setup are using. Should I be looking for anything specific in a cable?

Honestly, the type of HDMI cable you use won’t affect your FPS, but yeah, it can trickle down on resolution and refresh rates. Just stick with a cable that fits your monitor's HDMI version.
The Ultra High Speed HDMI cables are currently the best option available, supporting up to 48Gb/s, which is suitable for 4K HDR at 144Hz, and potentially even higher if the display and cable support compression. There’s also an Ultra96 cable announced, but we haven't seen any on the market yet. So as long as your cable is HDMI 2.1 with 48Gb/s, you're in a good spot!
DSC could max out at 4K 165Hz if you get the right setup, but I agree on the cable quality, if it's working for your Xbox, it should be fine.

If you're using the 165Hz mode on your G5, it relies on DSC (Display Stream Compression). Thus, any decent HDMI cable should work just fine. You don't necessarily need an Ultra High Speed cable; even an average one can handle the load because DSC reduces the bandwidth needed.
