If you're overseeing a large number of devices, is there a tenant-level setting in Microsoft 365 that works effectively for office applications? You're not going to find an easy way to set defaults across the board, especially since the web apps don’t support this either. It’s just how Microsoft operates—it's either their way or nothing!

Actually, you can change the global document template (normal.dotm) which might help. It's not perfect, though.
