The bigger concern is the overall budget balance. Spending close to €2,000 while pairing the system with an RTX 5060 leaves a lot of gaming performance on the table. You could consider a less expensive motherboard, cooler, case, or power supply and put the savings toward a stronger graphics card, such as an RTX 5070-class card or a Radeon RX 9070 XT. That upgrade would make a much larger difference to gaming than choosing between these two RAM timing sets.
Your 850W power supply is more than sufficient for the current setup and should leave room for a future graphics-card upgrade. Also, 32GB in a 2x16GB dual-channel kit is the right configuration for this build. Enable the kit’s EXPO profile in the motherboard firmware so it actually runs at DDR5-6000 rather than falling back to a lower default speed.
Both kits run at DDR5-6000, so the main difference is their secondary timings. The CL30-36-36-76 kit is technically tighter and therefore slightly better, but the real-world FPS difference will be extremely small—often impossible to notice.
