I'm trying to decide between two used GPUs: the MSI Gaming X Trio RTX 3070 for $300 and the XFX Merc 318 RX 6800 XT for $380. I know that the 6800 XT is generally considered better, but I'm wondering if it's worth the extra $80. I play on a 3440x1440p monitor, and I've heard that with DLSS, the 3070 can perform similarly to the 6800 XT without using FSR. I don't typically play the latest titles either, and I also noticed there's the non-XT 6800 available for $356. What do you all think I should buy?

Honestly, I’d go with the 6800 XT. It has double the VRAM, which really helps at 1440p ultra-wide. The 3070 is decent, especially with DLSS, but when you kick on FSR for the 6800 XT, it will definitely outperform the 3070. Just future-proof yourself with the extra power the 6800 XT offers!
I've been using an RTX 3070 with a 5700X3D, and while I get solid FPS with DLSS at that resolution, I still think the 6800 XT is the way to go for the future. If you can find a good deal on a 3080, that could also be a great Nvidia option since it gives you more VRAM.
If you're gaming at 3440x1440, the 8GB of VRAM on the 3070 is a bit limiting. The 6800 XT is a better choice for that resolution, and you’ll appreciate the extra headroom. The 3070 is great for older games, but for newer titles, the 6800 XT is just a lot more capable.
