Which GPU Should I Choose: RX 7800 XT, RTX 5060 Ti, or RX 9060 XT?

If you're sticking with a 5700X, I'd go for the RTX 5060 Ti with 16GB. I have one and it performs great. The 7800 XT isn't really necessary unless you're really into heavy gaming since its ray tracing performance isn't as strong. Plus, in productivity tasks, the 5060 Ti would serve you better.
