I've been doing some research and narrowed it down to the RTX 5060 Ti with 8GB or the RX 9060 XT with 16GB. I'm really torn between the two, and I'd love to hear your opinions on which one I should go for.

Going for 8GB GPU now seems outdated. The 9060 XT 16GB is fantastic for modern gaming and is worth the investment. I wouldn't consider anything less than 12GB for today's games.
I’d definitely go with the RX 9060 XT 16GB. I recently played Star Wars Outlaws on high settings with ray tracing and it used up to 13GB of VRAM, so that extra memory really helps in modern games.
If it’s in your budget, avoid the 8GB options altogether. The RX 9060 XT 16GB not only has great performance but also comes with advanced features like FSR 4, which is a huge plus.
Stick with the 9060 XT. 8GB just won't cut it anymore for major titles. I've seen benchmarks that show how quickly that VRAM can get maxed out, and you don’t want to be stuck downgrading graphics in a new card.
Honestly, the 9060 XT is the way to go. Getting an 8GB GPU in 2026 would be a huge mistake. If you can stretch your budget, do it and get the 16GB card!
Totally agree! The extra VRAM will make a big difference in the long run.

Exactly, future-proofing is key! More VRAM means longer-lasting performance.
