I'm trying to figure out which setup would perform better for gaming or heavy tasks: an i7 13700F paired with an RTX 5070 and two sticks of RAM, or a 9800X3D with the same RTX 5070 but using only one stick of RAM. Both setups would use the same type of RAM. Any thoughts on the performance differences?

In most cases, the 9800X3D will outperform the i7 13700F as far as gaming is concerned, especially given it has more cache. If you're considering an upgrade, a 7800X3D with dual-channel RAM would be an even better choice if you can manage it!
I lean towards using dual-channel RAM any day because it tends to offer better performance in a lot of applications. But in this particular situation, the CPU differences might not make a huge impact since the 9800X3D is less affected by RAM configurations because of its extra cache.
