I'm in the process of building a gaming PC and could really use some help! My budget is around $1,000-2,000, and I'm mostly looking to play games like Overwatch, CS, Minecraft, GTA, Tarkov, and DBD. Right now, I'm using a Razer laptop with an i7-9750H and RTX 2070, and it's been holding up okay, running most games at 90fps+ on lower settings. I'm specifically decided on getting an NVIDIA GPU, an Intel CPU, and Windows OS, as I'm comfortable with those. I'm thinking of going for an 8GB GPU, but I'm not sure if that's enough these days. I'm particularly interested in whether I should go for a 40 series or a 30 series NVIDIA GPU, and what good value options are out there. Also, any suggestions for CPUs and cooling systems would be awesome! By the way, I'm located on the US East Coast for pricing context.

For the games you listed, an 8GB GPU should be fine, but for more demanding titles, look for something with 12-16GB. Given your budget, I’d recommend going for the latest generation. For CPUs, consider AMD’s X3D chips—they’re generally better for gaming and have a solid upgrade path. You could check out some build examples on PCPartPicker!
I have a 4070 Ti, and it runs Overwatch on ultra at a constant 144 fps on a 4K monitor. If you can get at least a 4070, that should make your system somewhat future-proof.
Will the quality of my monitor impact how well the GPU performs? I’m not looking to upgrade to a 4K monitor anytime soon.
