I looked up a domain on Namecheap yesterday, intending to buy it today, but now I see it's registered and parked by Namecheap. How does a domain I checked suddenly get snatched up by them within a day? Their customer support suggested I make an offer on it, which feels really frustrating. I'm done with them and considering moving my other domains. By the way, Namecheap's support claims someone else registered the domain, but I'm curious to know who that is and how this situation arises.

You should avoid searching directly on registrars if you're not ready to buy immediately. Use WHOIS services instead to check availability. Many registrars, including Namecheap, have been known to do this. It’s frustrating!
