I've recently set up a UPS to protect my PC and router from frequent short power outages during winter. I calculated the total wattage of my setup to choose a suitable UPS, which is a 1000VA/600W model. However, when I disconnect the power, the UPS drains from 100% to 0% instantly under load, causing my PC to shut down even though it does maintain power for smaller loads. I'm wondering if this is a fault with the UPS or if I might have made a mistake in my setup.

Does your UPS give any indication of how much power is being drawn when you're gaming? Sometimes they have displays that show that info, which can help troubleshoot the issue.
Your GPU can spike over 400W under heavy load, so it’s possible your system is drawing more than the UPS can handle, especially if your PSU is efficient at around 92% tops. This might be why it cuts out. Just something to consider along with checking the battery.
It sounds like there might be an issue with the battery. If you have a multimeter handy, you could check the battery voltage. It’s a bit strange for a new UPS to have this issue unless something's off with the lead acid battery.

Nah, it just has an LED for power status. I can see the battery level in Windows, though.
