I just purchased a new laptop that runs Windows 10, and when I opened Word for the first time, I noticed a OneDrive document from someone else in my recent files. The last update on the file was from 2015, not long after the OS was released. I already uninstalled OneDrive and no one is signed in. Does this mean the laptop was actually used? Should I be worried about potential viruses or keyloggers since it might not be new?

Yeah, if any file is showing up in Recent, that means it has been used. It’s worth checking where you bought it from and whether you trust them. If not, I would recommend wiping the OS and reinstalling it to ensure your safety.
What kind of document are we talking about? Also, where did you purchase the laptop? If it’s a .docx and you bought it from Amazon over 30 days ago, you might be out of luck for a return.
It's definitely concerning that you're seeing someone else's file. If you got it from a seller, it might have been used before. I suggest doing a clean install of Windows using a USB stick just to be safe. You can never be too careful with unknown machines!
