I recently found an old laptop that belonged to my grandparents, and I've noticed that a process called Antimalware Service Executable is consistently using around 60% of the memory, which I believe is RAM. I'm assuming this is part of Windows Security since I haven't installed any other antivirus software. Is this normal? Any advice on what I can do about it?

The Antimalware Service is pretty much always running, scanning for threats, which is why it can be so demanding on resources. If you're using Windows 10 or 11, having faster RAM and an SSD is almost a must for a smoother experience, especially if these scans happen frequently.
The Antimalware Service Executable is actually part of Windows Defender. It tends to be resource-intensive, especially if your laptop is running older hardware. One potential fix is to upgrade to an SSD if it doesn't already have one. Otherwise, you can schedule the scans for times when you’re not using the laptop much to help reduce the impact on system performance.
You might want to run a full scan with the built-in antivirus. Doing this can help determine if the process is functioning properly or if it’s actually some malware disguised as the Antimalware Service.
