I just got my new PC and I'm trying to use my DualSense Edge controller, but I'm experiencing some delay. Does anyone know what might be causing this?

If you're using it wired, make sure the cable is not damaged and is a high-quality one. Sometimes a faulty cable can lead to delays.
Are you connecting via Bluetooth? That can sometimes cause input lag. If so, try using it wired instead.
