I've just moved an HDD from my old PC to my new one, which mainly has an NVMe SSD. The HDD worked perfectly on the old system, but now it doesn't show up in file explorer, even though I can hear it spinning. This is actually the second time this has happened after transferring an HDD. I'm really looking for some guidance here!

You might want to check Disk Management first. Sometimes the HDD is there but just isn't showing up in file explorer. If it is, format it if you can, but make sure to back up any important files first!
You may need to assign a drive letter in Disk Management. Just right-click on it and see if that does the trick!
It could be as simple as assigning it a drive letter. Right-click on the HDD in Disk Management and see if that resolves the issue.
Have a look at your motherboard manual. Certain motherboards can disable SATA data ports when M.2 slots are in use. This might be what's causing your HDD to not show up.
I have a Gigabyte's A520M K V2; it mentions that an M.2 PCIe SSD can't set up a RAID with a SATA HDD. But I’m not even trying to set up RAID!
How do I back up any files if I can't access them?
