I'm transitioning from a laptop with an RTX 4050 to building a desktop. I previously had a Ryzen 3 2200G setup with an A320M motherboard and 16GB of 2666MHz DDR4 RAM, but I recently received an RTX 5060. The 2200G can't keep up, so I purchased a Ryzen 5 5500 instead of the 5600, which was too pricey here in Brazil. My main uses will be running local AI models (most needing 6GB of VRAM, so 8GB should suffice), playing Minecraft with shaders, and occasionally playing BeamNG. Also, I'll have general daily tasks but nothing too demanding. I'm wondering if the Ryzen 5 5500 will bottleneck the RTX 5060 too much, if the PCIe 3.0 interface will be a limiting factor, and whether my 16GB DDR4 2666MHz RAM is adequate. I've also got a 650W PSU and some NVMe drives. Oh, and I'm using a 1440p monitor.

The Ryzen 5 5500 will have a small bottleneck at 1440p, but nothing too drastic. As long as the VRAM can handle your games and AI tasks, the PCIe 3.0 won't be a major concern. Just make sure you turn up your graphics settings to get the most out of your GPU!
Your 2666MHz RAM might hold back your performance a bit, but overall, the Ryzen 5 5500 should pair decently with the RTX 5060. It's definitely a big upgrade from the 2200G! Just adjust your settings in games, and you should be fine, especially at 1440p.
Upgrading from 2666MHz to 3200MHz RAM can make a noticeable difference, potentially improving performance by a few percentage points, but it's not a game-changer. The 5500 is a solid choice for your setup!
