I'm planning to upgrade to a Taichi OC 9070 XT GPU, which can draw up to 482 watts under load. I currently have an 850-watt power supply unit (PSU) and a 7800X3D processor installed. If I stick to stock settings without overclocking or undervolting, do you think my PSU will be sufficient?

850W is pretty solid, but if you really wanna play it safe, a 1000W PSU would be better. You might not overclock, but undervolting could be a good option for efficiency without sacrificing too much performance.
Whoa, 480 watts? That's a bit excessive! I undervolted my 9070 XT to around 260 watts and still get great performance. The difference in wattage isn't worth the extra energy in my opinion.
Just a heads up, the Taichi version's 16-pin cable isn't really well-regarded. If your PSU doesn't support it natively, consider getting a separate one.
If your PSU is a good quality brand and not a cheap one, then 850W should be enough. Some even say that 750W can handle the load. Just make sure it's reliable!

I ran some estimates and found that with the 9070 XT, my whole system could pull around 768 watts at peak. A solid PSU definitely helps mitigate any issues.

I feel you on the cable management—it's such a hassle! If you decide to swap your PSU, get a local tech shop to help out. They can manage the cables and make it look nice!
