Best Low Power Computer for Working from a Van?

Hey everyone! I'm building a van and need a computer setup that's super energy-efficient since I'll be relying on solar power. I do a lot of Zoom calls (around 16 a day, averaging 13 minutes each) and usually have several Chrome tabs open. I also enjoy watching YouTube and listening to Spotify occasionally. I'm considering using Starlink for internet and plan to attach a low-power monitor, like the one I linked. I've been looking into ARM computers and the M4 chip seems promising, but I'm unsure if it's my best option. I usually stick to Windows, but I hear ARM might be more efficient for my needs. I want a total setup that costs around $1000, ideally. Should I go for the M4 chip, or is there a better Apple product out there? Maybe a mini PC? I'm also experienced building PCs, but I don't want to overcomplicate things if a laptop would be simpler. Any thoughts? Thanks!

I think moving away from the x86 architecture is a smart move for saving power. A laptop with a docking station would definitely help with that!

Thanks! Just to clarify, what do you mean by a docking station? Is that just a USB-C hub?
