I'm setting up a new MacBook Air and one of the tasks is to handle notifications. I find them pretty distracting and not really useful, so I'm looking for a way to turn them off completely. Is there a way to disable all notifications at once, or do I really have to go through each app's settings individually?

Unfortunately, there's no universal switch to turn off all notifications at once. You have to go in manually for each app to disable them. It's a bit tedious, but that's how it is right now.
