I'm looking for recommendations on a GPU that's not too expensive but will help future-proof my system, considering I have 16GB of RAM. My budget for the GPU is between $300 and $500, and I'm based in the US. I have a mini ITX case, specifically the NZXT H200i, and my motherboard is a Gigabyte X570I mini ITX AM4.

I’d also recommend checking out the Arc B580 if you can find it near MSRP. It performs surprisingly well for the price, especially for casual gaming.
In your price range, the RX 9060 XT 16GB is probably the best choice unless you’re open to used GPUs. If you're gaming at 1080p, this card will serve you well for a while.
If you're looking at NVIDIA, cards like the 5070 and 5070 Ti are also excellent for good pricing now. They offer great performance, especially if you're into ray tracing. Make sure to check what fits in your small case, though!
