I'm planning to set up a dual boot with Windows and Linux Mint on separate SSDs, and I have an HDD for additional storage. My main question is whether I need to install programs like Discord and Steam on both operating systems or if I can access them from a single install across both systems. If I do need to install them separately, how does that affect my HDD storage? I'm a bit confused about how storage is managed in a dual boot setup, so any clarification or resources would be greatly appreciated!

Even if you use Wine to run Windows apps on Linux, there can be issues. Many people find that they end up using one OS for most tasks and the other for just a few things. Personally, I've moved away from dual booting since Windows handles my gaming much better.
Yep, you'll have to install applications separately on each OS. However, you can definitely use the shared HDD for standard file types like documents and pictures. You can even use it for game files, as long as they're compatible with the OS you're using at the time.
Each OS needs its own separate installations. While you could mount your Windows partitions in Linux, most Windows applications wouldn't run natively there. Some cross-platform apps might work, but you'd typically have to handle different versions.
You will need to reinstall applications on both operating systems. Since Windows and Linux are quite different, the apps you install on Windows won't work on Linux, and vice versa. They don't play together well at all! If you try running a Windows app on Linux, you're just asking for trouble.
