I'm considering upgrading my graphics card from a 3070 to something in the 6000 series, but given the current market situation, I'm not sure if I should just go for the 5070 Ti instead. The 8GB of VRAM on my current card struggles with some of my rendering work. What do you think?

It's definitely worth snagging a 5070 Ti or a 9070 XT at MSRP if you can find one. The RAM prices are pretty wild right now, but getting a card with more VRAM is a solid move.
Now might be the perfect time to buy before prices shoot up. Both AMD and NVIDIA are cutting production, which will increase demand for existing stock. Definitely lean towards more than 8GB of VRAM for future-proofing. Good luck!
I just upgraded from a 3070 to a 5070 Ti. The performance difference is noticeable, especially with 1440p gaming. My 3070 was struggling with VRAM on some games, leading to stuttering, so I'm relieved to finally have more headroom. Just make sure your setup won't bottleneck the new card!
If a new card can boost your performance by 50% or more and it fits your budget, I'd say go for it! Just be sure to get a card with more than 8GB of VRAM; it’s becoming a standard requirement these days.
