I'm considering a Ryzen 5 7600 to use with a 9070 XT. Do you think they'll work well together, and if not, can you suggest some good CPUs around the $200 mark?

It really depends on what games you're playing. Are there any bundle deals for the Intel 2650K in your area? That could be an option too!
I have a Ryzen 5 5600X paired with a 7900 XT, and it performs really well for my needs. I think the 7600 would be a solid match too. If your budget allows, you might also want to check out the 9600X.
