I'm currently using a Ryzen 5 3600 CPU paired with an RX580 8GB graphics card. I'm looking to upgrade my GPU and have a budget of 250-300 euros. I've been considering a used RTX 3060 Ti, but I'd love some recommendations on what might work best for me.

Check out this part list I found that fits your budget! You can get the Sparkle GUARDIAN OC Arc B570 for about 245 euros, or the ASRock Challenger OC Arc B580 for around 278 euros. Those are decent options for the price!
If you can stretch your budget by just a bit, I suggest borrowing 50 euros to grab the RX 9060 XT with 16GB of memory. It's an incredible card and you definitely won't regret it! Just a heads up, though, you might hit some bottlenecks with your Ryzen 5 3600, but still, that would be a solid choice for the long run.
Totally agree! The 9060 XT is a beast, and upgrading your CPU later on would really boost your performance.
