I plan to allocate most of my budget to the motherboard and memory, with the idea of upgrading the processor and video card later on as prices drop. I'm not aiming for the latest and greatest tech.
I was considering the Ryzen 7 7800X3D, but I've also seen mentions of the Ryzen 7 7950X. I'm wondering whether that would be overkill for my use case. Additionally, what are the thoughts on Asus, Gigabyte, or MSI motherboards? I'm looking at possibly a B850 or X870, primarily for some future-proofing. Overclocking isn't something I'm interested in.

For what you're doing, the Ryzen 7800X3D is likely the best fit. The extra cores in the 7950X would probably be overkill given your specific needs. Think about what you're really going to use—8 cores should be plenty for both gaming and productivity without wasting resources.
