I recently upgraded my motherboard to an ASUS Prime B550-M and swapped out my CPU from an AMD Ryzen 5 2600 to a Ryzen 5 5600. Currently, I have a GTX 1060 with 3GB of VRAM, but I'm thinking about moving to an RX 6600. I also have 16GB of DDR4 RAM running at 3200MT/s and a 500W power supply. What GPU options would be a good fit for my setup?

If you're looking for budget options, a used RX 6600 XT or RTX 3060 would be great choices. Right now, the prices are good for those cards.
For a setup like yours, a RTX 3060 would fit perfectly and it's pretty affordable at the moment!

You mentioned a 500W PSU, but be careful! There are tons of 500W units out there, and many of them are not reliable. I'd say about 80% of those PSUs could be ticking timebombs. Before you think about upgrading your GPU, you might want to check if your PSU can handle it without issues.
I have a Chieftec PSU. I didn’t get the full name, but it cost me around $50.
You should also consider higher-end options like the RTX 3070 or the 4070 if your budget allows.
I've been using a RX 5500 with 16GB of RAM at 3000MHz along with an RTX 2060 Super and a 500W PSU for months without any issues. If you're questioning the wattage of your PSU, you should be fine as long as it's a decent brand and not a cheap knockoff. Consider the RX 6650 XT too; it's a step up from the 6600 and has similar power requirements. My 2060 Super runs on about 175W, so you should be okay with your PSU.
